Pancakes

Today is the last day of Maslenitsa (Ма́сленица) also known as Butter Week or Pancake week, a Russian religious and folk holiday. In Slavic mythology, Maslenitsa is a sun festival, celebrating the imminent end of the winter.
My mom was making pancakes for my father all week :)  I made thin pancakes only today, for breakfast.
 
You will need:
eggs - 2
milk - 300 ml  (10oz)
sugar - 2 table spoons
flour - 1 cup
vanilla extract - 1 tea spoon
oil

Beat eggs with whisk, add milk, vanilla, and sugar, mix.
Add this mixture into flour with sugar. Mix with whisk.
Heat the pan, add 1 tsp of oil.  I use 1/4cup ladle to pour the batter into the hot pan. Quickly spread the batter moving the pan.  Also, I use small pan for my pancakes, so they are the same size.
Turn the pancake when one side is golden-brown.
Serve your pancakes with berries, whipped cream, melted butter, sour cream, syrup...you name it :)

P.S. You can make this batter beforehand in the evening and put in the fridge, and in the morning just fry pancakes. How easy it is!
